½ cup halved black grapes
½ cup halved green grapes
¼ cup pomegranate pearls
8-10 orange segments
6-7 cherry tomatoes, halved
1 medium carrot, cut into 1 inch thick pieces
1 medium cucumber, cut into 1 inch thick pieces
15-20 baby spinach leaves
Fresh mint sprigs for garnishing
1 medium avocado
2 tablespoons lemon juice
3-4 tablespoons olive oil
Salt to taste
Black pepper powder to taste
1 tablespoon chopped fresh coriander leaves


1. To prepare dressing, halve, deseed and scoop out the flesh in a blender jar.
2. Add lemon juice, olive oil, salt, pepper powder, coriander leaves and blend using an electric blender till smooth.
3. Mix together black grapes, green grapes, pomegranate pearls, orange segments, cherry tomatoes, carrot and cucumber in a bowl.
4. Add the dressing and baby spinach leaves and mix well.
5. Serve immediately garnished with mint sprigs.
