An unusual salad of palm hearts


1 two-feet trunk of palm tree
½ large onion
1 large tomato
1 lemon
Salt to taste
Black pepper powder to taste
2 tbsps finely chopped spring onion greens
2 tbsps oil


1. Peel the outer two layers of the trunk to get to the palm heart.
2. Finely slice the onion and put into a bowl. Finely slice the tomato and put into the bowl.
3. Halve the palm heart vertically and slice them finely and put into the bowl.
4. Squeeze the juice of 1 lemon into the bowl. Add salt and pepper powder.
5. Add spring onion greens and oil and mix
6. Serve immediately.
